Easter is a time to gather with loved ones, enjoy delicious meals, and celebrate the arrival of spring. At WineLion, we believe that every great dish deserves an equally great wine. That's why we've curated a selection of recipes paired with our favorite Romanian wines to make your Easter weekend unforgettable. 

Whether you're starting on Maundy Thursday or ending on Easter Monday, these pairings will make every meal a feast!

Maundy Thursday: Start Light and Reflective

Spinach and Goat Cheese Quiche

This creamy quiche is packed with fresh spinach and tangy goat cheese: perfect for a light yet satisfying start to your Easter weekend.

Ingredients:

  • 1 pre-made pie crust (or homemade if you prefer)
  • 1 teaspoon olive oil
  • 1 teaspoon minced garlic
  • 3 packed cups fresh spinach
  • 4 large eggs
  • 1 cup whole milk
  • 4 ounces goat cheese, crumbled
  • Salt and pepper to taste
Instructions:

  1. Preheat your oven to 190°C (375°F).
  2. Heat olive oil in a skillet over medium heat, add garlic, and sauté until fragrant.
  3. Add spinach and cook until wilted. Remove from heat.
  4. In a bowl, whisk together eggs, milk, salt, and pepper. Stir in the spinach and goat cheese.
  5. Pour the mixture into the pie crust and bake for 35–40 minutes or until the center is set.
  6. Let cool slightly before serving.

Wine Pairing:

Nomad Sauvignon Blanc. The zesty citrus notes of this wine enhance the creamy texture of the quiche while complementing the fresh spinach.

Good Friday: A Day of Simplicity

Grilled Salmon with Lemon and Dill

This dish is light yet flavourful, making it perfect for Good Friday's reflective mood.

Ingredients:

  • 4 salmon fillets (skin-on)

  • 4 tablespoons olive oil

  • 2 tablespoons dried dill

  • Zest of 1 lemon

  • Salt and pepper to taste

Instructions:

  1. Preheat your grill to medium-high heat (around 200°C/400°F).

  2. Combine olive oil, dill, lemon zest, salt, and pepper in a bowl.

  3. Brush the mixture over the salmon fillets (except the skin side).

  4. Place salmon on indirect heat (no flames underneath) and grill for 8 minutes.

  5. Flip to direct heat for another 2 minutes or until cooked through (internal temperature of 63°C/145°F).

  6. Let rest for a few minutes before serving.

Wine Pairing:

Karakter Rosé. The fruity notes of this rosé balance the fresh flavors of the salmon beautifully.

Holy Saturday: Hearty Comfort Food

Herb-Crusted Rack of Lamb

Prepare for Easter Sunday with this indulgent lamb dish that's sure to impress.

Ingredients:

  • 1 rack of lamb (about 600g), frenched
  • 3 tablespoons olive oil
  • ⅓ cup breadcrumbs
  • ⅓ cup grated Parmesan cheese
  • 1 tablespoon minced rosemary
  • 1 tablespoon minced parsley
  • Salt and pepper to taste
Instructions:

  1. Preheat your oven to 230°C (450°F).

  2. Season lamb with salt and pepper, then sear in a hot skillet with olive oil until browned on all sides.

  3. In a bowl, mix breadcrumbs, Parmesan, rosemary, parsley, and olive oil.

  4. Coat the lamb with the breadcrumb mixture and place it in the oven on a baking sheet.
  5. Roast for 20–25 minutes or until internal temperature reaches medium rare (63°C/145°F). Let rest before slicing.

Wine Pairing:

Artisan Feteasca Neagra. This full-bodied red wine's rich flavours of dark berries and subtle spices pair perfectly with lamb. 

Easter Sunday: A Festive Feast

Honey Glazed Ham with Roasted Vegetables

A classic centerpiece for Easter Sunday that's both sweet and savory.

Ingredients:

For the Vegetables:

  • 2 white potatoes (cubed)

  • 1 medium yam (cubed)

  • 3 tablespoons fresh oregano

  • Olive oil, salt, and pepper

For the Ham:

  • 2 lbs ham (sliced)

  • ¼ cup honey

  • 1 tablespoon Dijon mustard

  • Black pepper to taste

Instructions:

  1. Preheat oven to 200°C (400°F).

  2. Toss vegetables with oregano, olive oil, salt, and pepper; spread evenly in a baking dish.

  3. Layer ham slices over the vegetables.

  4. Mix honey, mustard, and black pepper; drizzle over ham.

  5. Roast uncovered for 40–45 minutes or until vegetables are tender.

Wine Pairing:

Artisan Tamaioasa Romaneasca (Dry). Its floral aromas and hint of sweetness balance the saltiness of the ham beautifully.  

Easter Monday: End on a Sweet Note

Chocolate Fondant

This indulgent dessert is quick to make but leaves a lasting impression.

Ingredients:

  • 160g dark chocolate (70% cocoa), chopped

  • 160g unsalted butter

  • 4 eggs

  • 200g caster sugar

  • 50g plain flour

Instructions:

  1. Preheat oven to 200°C (392°F).

  2. Melt chocolate and butter together; let cool slightly.

  3. Whisk eggs, sugar, flour, and salt in a bowl; mix in chocolate mixture.

  4. Divide batter into greased ramekins.

  5. Bake for 10–12 minutes until tops are set but centers are molten.

Wine Pairing:

Artisan Tamaioasa Romaneasca (Sweet). Its subtle sweetness pairs wonderfully with rich chocolate desserts.
