Vinification Details
Following hand harvesting at full ripeness, during end of September/beginning of October, the grapes were destemmed and slightly crushed. Fermentation conducted in stainless steel closed tanks with gentle cap irrigator, at 26-29°C for 14 days. The wine has been drained directly in the barrels of 225 L, where the malolactic fermentation finished.
